Masala varieties for Indian food recipes

Food! Everyone loves it and we can even talk about it for hours. You might know different Indian food recipes, but how much do you know about the masalas /spices used in Indian food? Different kinds of masalas have been used in Indian food since ancient times in both whole and grounded forms. Spices are the heart of Indian cooking and they have their own health benefits. Spices generally add flavor to the food and nutrients to the dishes without any side-effects.  Indian spices offer significant health benefits to an individual’s body.

 Spices or masalas are a blend of different spices mixed together in dissimilar proportions. These are good source of minerals, vitamins and nutrients. Every region in India has its own blend of different masalas and their use in different recipes.
Let’s have a look at Masala varieties and their recipes for Indian food:

1.       Garam Masala: As the name suggests it’s a hot mixture and an amazing blend of different spices with maximum aroma and flavor. The spices used in garam masala may differ from place to place but the basic use of spices is common. These are cumin, cloves, cardamom, cinnamon, coriander, nutmeg and black pepper.  To make this masala, all ingredients are dry roasted and mixed together to grind. It is used in different types of curries, vegetarian and non-vegetarian dishes.

2.       Chat Masala:  It has a sweet and sour taste. It is used generally to give a tangy taste to Indian food recipes.  Add chat masala to golgappa, papari chaat, aloo chaat and to some drinks like jaljeera etc.  It is a blend of spices that are extremely stimulating and aromatic. These include coriander powder, dry mango powder, black salt, black pepper, cumin powder, ginger powder, asafetida, chilli powder and mint.

3.       Pav Bhaji Masala:  This masala is basically used for makimg bhaji, mashed mixed vegetables to be eaten with pav. This dish is mainly eaten in Maharashtra and now it is popular across India. It is a blend of cumin seeds, fennel seeds, black caradamom, black pepper, dry red chillies, cinnamon and dry mango powder. All ingredients are dry roasted and then ground to form a fine powder. It can be used in different recipes for Indian food lovers.

4.       Channa Masala: Channa is the most popular Punjabi dish but liked across India. Generally chana is eaten with bhatura or kulcha.  Chana masala is used in preparing Punjabi chole and it is made using spices like cloves, cinnamon, coriander, black pepper, cumin seeds, cardamom, anardana and bay leaves.


5.       Sambhar Masala: Sambhar masala is used in one of the most popular south Indian food recipes, Sambhar. It is the blend of kashmiri red chillies, coriander seeds, toovar dal,fenugreek seeds,  split Bengal gram, split black lentils, turmeric powder, asafetida and oil.
